Add 2 oz Mezcal, 0.75 oz Lime Juice, 0.75 oz Simple Syrup, and 1 Egg White to a shaker without ice.

Dry shake vigorously to emulsify the 1 Egg White.

Add ice to the shaker and shake again until well chilled.

Strain into a rocks glass filled with fresh ice.
