Combine Mint leaves and 1 oz Honey Syrup in a chilled julep cup or rocks glass and gently muddle to release oils.

Add 2 oz Bourbon and fill glass with crushed ice.

Top with more crushed ice if needed and garnish with a Mint sprig.
