This is Alex Day's original 2012 recipe, which splits its base between Clear Creek 8-year apple brandy and Redbreast 12-year Irish whiskey — a deliberate pairing since the apple brandy lacks aged character on its own, and the Irish whiskey's vanilla and spice fill that gap. Honey syrup is used instead of Demerara to keep the drink lighter.
