Pumpkin Sazerac

Chill an old-fashioned glass.

Rinse the chilled glass with the 0.25 oz Absinthe by pouring it in, swirling to coat, then discarding any excess.

Add the 2 oz Cognac, 0.5 oz Pumpkin Syrup and 3 dashes Peychaud's Bitters into a mixing glass filled with ice and stir until well chilled.

Strain the mixture into the prepared old-fashioned glass.

Twist a lemon peel over the drink to express oils and garnish with the peel.
