Steps

Add 2 oz Scotch, 0.75 oz Lemon Juice, 0.5 oz Simple Syrup, 1 dash Absinthe, and 1 Egg White to a shaker (no ice) and dry shake to emulsify.

Add ice and shake again until chilled.

Strain into a highball glass without ice.

Top with Club Soda to create foam.
