Combine the 2 oz Gin, fresh 0.5 oz Lime Juice, fresh 0.5 oz Lemon Juice, 0.75 oz Simple Syrup, 1 oz Heavy Cream, 1 Egg White, and 3 dashes Orange Flower Water in a shaker and dry shake without ice until fully incorporated.

Fill the shaker with ice cubes and shake for 5 minutes.

Double strain through a fine mesh strainer into a pint glass.

Slowly add the 2 oz Sparkling Water, occasionally tapping the bottom of the glass on a table or flat surface to settle the foam. A white puck of foam should form on top of the drink.
