Combine the 2 oz Gin, 0.75 oz Simple Syrup, fresh 0.75 oz Lemon Juice, and 1 Egg White in a shaker and dry shake without ice until fully incorporated.

Add ice and shake again until well chilled.

Double strain through a fine mesh strainer into a fizz glass.

Slowly add the cold seltzer, occasionally tapping the bottom of the glass on a table or flat surface to settle the foam. A white puck of foam should form on top of the drink.
